Instant Pot Potato Corn Chowder

This simple Instant Pot potato corn chowder formula is astounding!! It just takes 15 minutes to make and is the ideal rich corn soup to eat throughout the entire year. Served without anyone else for supper or with a side of moves it definitely will be your new most loved weight cooker soup. Your children will believe it's a victor as well!

Wow is right now Pot potato corn chowder astounding! I have been exploring different avenues regarding new machine of mine since I got it just before Christmas and it has changed my reality!

We eat together more frequently now in light of the fact that everything cooks SO a lot quicker, and I feel like we eat somewhat more beneficial too on the grounds that I can cook with crisp veggies and it requires no investment by any stretch of the imagination. We've made soups, stew, popcorn, and now this chowder in it and I think this is one of our most loved Instant Pot formulas up to this point. Stay tuned for increasingly more every week as well.

Instant Pot Potato Corn Chowder

Ingredients :

  • 6 red potatoes diced
  • 4 ears corn (kernels removed from cob, about 2 cups, can use frozen or canned)
  • 1/4 onion diced
  • 3 c vegetable broth can use water but this is better
  • 3/4 c cheddar cheese
  • 3 c half and half
  • 2 tbsp corn starch + 2-3 tbsp water, a bit more cornstarch depending on how thick you want it
  • 3 tbsp butter
  • Pinch of salt

Instructions :

  1. Dice all your veggies. 
  2. Put Instant Pot on saute and add butter until melted. 
  3. Add diced onions and cook until soft. 
  4. Add vegetable broth, diced potatoes, and corn removed from the cob. 
  5. Can add pinch of salt now.  Close lid and close steam valve. Set to pressure high for 10 minutes. 
  6. When done do a quick release, carefully lift lid when steam is gone. 
  7. Whisk together a bit of water and cornstarch into a small cup until smooth.
  8. Push saute on pressure cooker to allow mixture to boil. Add cornstarch mixture to pot and stir.
  9. Add half and half and cheese slowly, stir and serve when it has thickened a bit.
  10. Top with crispy bacon pieces to take it over the top!
