Avocados loaded down with new tomatoes and mozzarella hurled in basil pesto and completed with a sprinkle of balsamic vinegar.
Amid the late spring one of my most loved things is the majority of the crisp ready tomatoes and basil and the mix of the two is totally spectacular! Things show signs of improvement when you include some new mozzarella and contact of balsamic vinegar to the blend, caprese serving of mixed greens style, and I regularly prefer to toss some diced avocado in too. These caprese stuffed avocados are a marginally unique interpretation of that thought where an avocado half is loaded up with a blend of diced tomatoes and crisp mozzarella prepared in a hand crafted basil pesto served on a bed of plate of mixed greens all finished with a sprinkle of balsamic decrease! The mix of the cool and smooth avocado, delicious tomatoes, mozzarella, crisp basil pesto and tart balsamic vinegar is essentially divine; unadulterated summer on a plate!
You can serve these caprese stuffed avocados as a starter or tidbit with simply a large portion of an avocado or serve it as a light supper with two parts of an avocado!

- 2 avocados, cut in half, stone and skin removed
- 1 cup salad greens
- 1 cup tomato, diced
- 1/2 cup fresh mozzarella, diced
- 2 tablespoons basil pesto
- 2 tablespoons balsamic reduction
Directions :
- Plate the avocado on the salad greens and top with the mixture of the tomato, mozzarella and pesto followed by a drizzle of the balsamic reduction.
