It has certainly felt like mid year for a considerable amount now around here so it's sort of insane to imagine that the official begin to the season is as yet a couple of days away. I think that its difficult to accept since we have been perspiring our tails off for well over a month currently, yet it's valid.

Pools, super cold lemonade, frozen treats, shouting kids and more will fill the following a while. Be that as it may, the best piece of all? The BBQs obviously! All things considered, and the gelatos in the event that you ask me!

My hubby, Anthony has never been a cook in any capacity whatsoever. I generally joke that he couldn't cook a nutty spread and jam sandwich on the off chance that he attempted. Be that as it may, with regards to flame broiling, he is certain he is the ace. Also, I won't grumble one piece about that!

Ingredients :

  • 2 cans black beans
  • 1 green Chile pepper (or jalapeƱo for kick!) seeds removed
  • 1/4 of small red onion
  • 1/2 cup corn kernels
  • 2 garlic cloves
  • 1/3 cup cilantro
  • 1 - 2 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp red pepper flakes
  • Juice of 1/2 lime
  • 2/3 cup bread crumbs (more if mixture is too thin) whole wheat or gluten free, panko crumbs will work as well
  • 1 egg or flax egg
  • Sea salt and ground pepper to taste

Instructions :

  1. In a food processor, process the chile pepper, onion, and garlic until finely ground. (You can finely dice them instead if desired!)
  2. Add in one can or two cups of black beans, cilantro, lime juice and spices. Process until a smooth, pasty consistency.
  3. Transfer the mixture to a medium sized mixing bowl.
  4. Add in the rest of the black beans, egg or flax egg, bread crumbs, and corn and stir until combined.
  5. Form into burger sized patties. (Sometimes I freeze this for about 15 minutes or so to help them form better into burgers.)
  6. Grill over medium low heat for about 4 minutes on each side.
  7. You can also cook these in a frying pan over medium heat until browned on each side.
